There's a danger in getting too attached to any one dish at Dennis Max's "farm to fork" restaurant in Pineapple Grove. Although one may be tempted to develop a dependency on pan-seared gnocchi spiked with morel mushrooms and truffled fondue, or a tempura-battered squash blossom stuffed with creamy goat cheese, that would be a mistake.

Chef du Jour: Chris Miracolo goes farm to fork to art

Miracolo's first foray into the food world was bussing tables at his parents' coffee shop in Long Island. The family indoctrination continued at Tesoro Ristorante, his uncle's eatery, in Westbury, N.Y. After his parents divorced at 15, Miracolo moved to Florida and began working as a cashier at a pizzeria. Gradually, he made his way into the kitchen, helping out when short staffed. He considered the food business a means to make money but not a career.

Dennis Max has come full circle. It's a circle that began in Southern California in the 1970s, where, as young restaurant managers for the seminal Victoria's Station chain, he and buddy Burt Rapoport were seduced by "California cuisine" and its then–groundbreaking principles. The upshot was that there was such thing as qulity American cuisine, that restaurants could be casual and fun and still serve good food – and that the quality of ingredients and talent of the chefs should drive the menu.

A sneak peak at Delray's New Farm-To-Table Eatery

We stepped into Max's Harvest (which opens Thursday, June 9) last week in Delray Beach for a preview of the menu and barely recognized the space. Located in the former Taste Gastropub location, it seems brighter and zippier than before. Restaurateur Dennis Max's farm-to-table eatery features food directly from the producers.
This means the eggs used in executive chef Chris Miracolo's yummy, truffle-laden deviled eggs we sampled came from a local farm. (In fact, the farmer was on hand at the pre-opening party.)
We also had the pleasure of nibbling on roasted asparagus crostini with romesco sauce topped with a baked quail egg and sea salt, and a slow-roasted lamb ragù with English sweet peas and morel mushrooms topped with micro arugula.

MAX’S HARVEST, restaurateur Dennis Max’s “farm-to-fork” concept eatery, opens officially Thursday in Delray Beach’s Pineapple Grove district.
The menu features American fare inspired by local farms, hence the “Broward County Burrata” cheese served with a tomato-bread salad to the “Day Boat Swordfish” paired with roasted tomato farro. Executive chef is Chris Miracolo, most recently of Himmarshee Bar & Grille in Ft. Lauderdale.

I was invited the other night to a "friends and family" tasting of Max's Harvest, Dennis Max's new farm-to-table restaurant that is slated to open in June in Pineapple Grove in Delray Beach. Some of the guests were indeed friends of Dennis Max, but the others, like me, were either foodie wannabes or real foodies, like Jan Norris, who kept us educated as the courses came out of the kitchen.
